Slow Cooker Mild Mince Sausage and Vegetable Curry

Method

Method – STOVE TOP

  1. Heat a large deep-frying pan over medium heat. Add sausages and cook 5 minutes or until just browned. Transfer to a plate and cut into 3-4 cm pieces.
  2. Add onion and cook for 3 minutes or until softened.
  3. Stir in carrots and celery and cook for a further 3-4 minutes.
  4. Add Mild Mince Curry Simmer Sauce and ⅓ cup water and bring to a simmer. Return sausage to pan along with apple and sultanas. Cover and cook 10-15 minutes or until vegetables are cooked through. Stir through coconut milk.
  5. Serve topped with parsley and serve with steamed rice.

 

Method – SLOW COOKER

  1. Heat oil in a large frying pan over medium heat. Add sausages and cooked 5 minutes or until just browned. Transfer to a plate and cut into 5cm pieces. Place into slow cooker.
  2. Add onions, carrot, celery, apple, sultanas and Mild Mince Curry Simmer Sauce. Cover and cook HIGH 2 hours (LOW 3-4 hours).
  3. In the last ½ hour of cooking, add coconut milk.
  4. Serve topped with chopped parsley and steamed rice.

 

Tips: Pour off excess fat from pan after cooking sausages, reserving a tablespoon for cooking the onion.

  • 800g thick beef or pork sausages
  • 1 onion, finely chopped
  • 1 carrot, sliced thickly on the diagonal
  • 1 stick celery, cut into 1cm thick slices
  • 1 x 375g Passage to India Mild Mince Curry Simmer Sauce
  • 1 large (230g) Granny Smith apple, peeled, cored and cut into chunks
  • ⅓ cup (55g) sultanas
  • ½ cup (125ml) coconut milk
  • Chopped parsley and steamed rice, to serve
