1. Pour the Asian Master Stock into a large pot and bring to the boil.
2.Using a mortar & pestle blend together the salt, sugar, lemongrass, kaffir lime leaves, galangal, dried chillies and coriander root. Add the mixture to the Asian Master Stock.
3. Reduce the heat to a simmer and add the prawns, chicken and tomato to the pot and simmer 5 mins.
4. Stir in the lime juice, mushrooms and fish sauce. Soup should be sour, hot and salty but balanced. You can adjust flavour with sugar or lime juice.
5. Serve soup garnished with coriander leaves, bean sprouts and fresh chilli.
Note: You can make this soup with any kind of protein (fish, beef, chicken, shellfish, boiled eggs or tofu, or a combination). Make it your own.
