Thai Tom Yum Soup

Serves 4

2 x 500ml Packets Passage Asian Master Stock
1/4 Tsp Salt
1/2 Tsp Coconut Sugar
2 stalks Lemongrass, finely chopped
4 Kaffir Lime Leaves, finely sliced
6cm Galangal, sliced
3 Birdeye Chilli’s (more if you like it hot)
4 Coriander Stalks & Roots
200g Prawn cutlets, deveined tails on
200g Chicken breast, thinley sliced
2 medium Tomatoes, diced
2 Limes, juiced
200g Oyster Mushrooms
2 Tblsp Fish sauce

To Serve:
1 bunch Coriander Leaves
Bean sprouts
Red Chilli, sliced
